About Us

Authentic Japanese Sushi in Gifu

Fukusushi is a seasonal Japanese cuisine and sushi restaurant located in Hashima City, Gifu Prefecture. We serve handcrafted sushi and Japanese-Western fusion dishes using the finest local ingredients — including Hida Wagyu beef, Nagara River sweetfish (ayu), and live abalone.

Our chef personally selects seasonal fresh fish, meat, and vegetables every day. We warmly welcome international visitors and offer a special inbound course menu designed to provide an unforgettable Japanese dining experience. Takeout is also available for weekday lunch (from ¥540).

A curated sushi course celebrating Gifu's land and sea. Featuring 10 pieces of seasonal nigiri, a signature braised abalone dish, chawanmushi (Japanese egg custard), soup and dessert. The perfect introduction to authentic Japanese sushi culture.

Japanese Sushi Dining Tips

    カウンター席のため、事前予約をお勧めします。For the best experience, please make a reservation in advance.

    Eat nigiri with your hands or chopsticks
    握り寿司は手でも箸でも食べられます。Feel free to use your hands or chopsticks.
  3. 3
    Dip lightly in soy sauce
    醤油はネタ側に少しつけてください。Dip the fish side lightly into soy sauce — not the rice.

    No mixing wasabi into soy sauce
    職人がシャリにわさびを適量つけます。The chef adds the right amount of wasabi to each piece.

    Enjoy each piece fresh
    握りたてをすぐにお召し上がりください。Enjoy each piece immediately after it is served.
